Product : Antico Concerto Per quanto conducesse alla vita eterna come estremo premio, la vita nei monasteri doveva essere abbastanza monotona. In quelli femminili lo era, forse, anche di più. Le giornate erano scandite dal suono della campanella per alternare le ore da dedicare alla preghiera a quelle dedicate ai lavori. Era prassi che le consorelle si alternassero ai compiti affidati dalla badessa; in tal modo, colei che si dedicava alla biblioteca, dopo un mese si occupava dell’orto, dal ricamo si finiva alle pulizie della chiesa, e così via. Accadde che nel monastero delle Clarisse della vicina Tramonti, una suora poco capace nell’arte culinaria, ma brava organista ed esperta conoscitrice di musica, quando capitava per turno in cucina doveva sopportare le lamentele delle consorelle. Un giorno, per spirito di rivalsa, preparò un rosolio, utilizzando buona parte delle spezie che trovò nella dispensa del convento. Escogitò una ricetta a base di caffè, orzo, cannella, chiodi di garofano, calamo aromatico, corteccia di china, bucce di limone, bucce di arancia, vaniglia e tanti altri ingredienti mescolati insieme, a cui diede il nome di “Concerto”, giusta la sua predisposizione per la musica. Il liquore risultò graditissimo a tutti nel convento, e le sorelle ne chiesero insistentemente la ricetta e le dosi. Suor Cecilia tenne il segreto fino alla fine dei suoi giorni, e questo alone di mistero accrebbe talmente la fama del rosolio che travalicando una del convento diede origine in tutte le case della Costa d’Amalfi al tentativo di imitarne la ricetta. Oggi se ne contano tante con infinite variabili, ma il contenuto del “Concerto” de “I Sapori di Terra Nostra” è il più simile all’originale, frutto di lunghe ricerche nella biblioteca delle Clarisse di Pucara frazione di Tramonti in Costiera Amalfitana, estrapolando direttamente dalle note di spese delle spezie che all’epoca effettuavano le suore. Da gustare su dolci, gelati, yogurt, frutta, formaggi semistagionati...
