Description
Grapes are picked by hand in the second week of October. Maceration without stems at a controlled temperature (28°C) for 14/15 days. Malolactic fermentation takes place in steel vats this is followed by ageing, partly in small oak barrels and partly in tonneaux for a minimum of 18 months. Assemblage of the wine takes place in inox steel vats. Fining, if necessary, is carried out using egg whites. Filtration using large coarse filters precedes bottling to keep the maximum natural qualities. Then refinement in the bottle for at least 6 months.

The Farming Enterprise Castello di San Donato in Perano S.p.A. The agricultural estate is located in the area surrounding the hamlet of Castello di San Donato in Perano and stretches over a total surface of about 360 hectares. The Company produces excellent Chianti Classico D.O.C.G. and Chianti Classico Riserva wines; Supertuscans; Chianti Classico Grappa; an exquisite Extra Virgin Olive Oil D.O.P.; red wine and Balsamic Vinegar and other typical Tuscan products. The estate’s vineyards and olive groves are located in the heart of the Chianti Classico area, in the boroughs of Gaiole in Chianti and Radda in Chianti, at an altitude varying between 300 and 500 meters a.s.l. The soil is highly stony and presents steep slopes (gradients of up to 15-20%): these intrinsic features contribute to optimize drainage. The favorable climatic exposure allows the area to benefit from the dry weather during summer, while September is usually characterized by dramatic temperature changes occurring between night and day. Thanks to these advantageous climatic and environmental conditions, it is possible to produce wines and oils of such quality and structure. Extension of estate: 360 ha of which approx. 25 ha of olive groves, destined for the production of Oil D.O.P . Chianti Classico; approx. 75 cadastral ha destined for vine cultivation, 60 ha of which for Chianti Classico; approx. 260 ha of wooden areas. Altitude of vineyards: 300/500 m a.s.l. Method of cultivation: Guyot, spurred cordon. Vine Density: 3000/5000 plants per ha. Production: 2.000 hl, 750 of which bottled. Cellar capacity: 7.585 hl of which 6.600 hl stainless steel double tanks at controlled temperature; 700 hl casks of 81 hl e 41 hl in allier French oak and Slavonian oak; 240 hl tonneaux of 500 l in allier, never, vosges, fontainbleau; 20 hl barriques of 225 in allier; 25 hl in barrels of 114 l, allier.
